Asiago d'Allevo, made using raw milk from the Pezzata Nera and Bruno Alpina cows that leisurely graze in the higher mountain mountain pastures, with a huge variety of grasses, herbs and flowers.
It has an intense and savory taste that only becomes more complex with aging, with a scent reminiscent of yeasty dough and dried almonds. In our opinion, it is a tasty mix between a Manchego and a Parmigiano.
