Norwegian Brown Cheese - called Brunost or Gjetost - is made from 100% whey of cow's and goat's milk. With no added rennet or acid as a coagulant, the whey is boiled and caramelised into this sticky and fudgy cheese.
The texture is just like toffee but the flavour is where it shines: think salted caramel with a cheesy umami note. Pairing it with apple brings out the umami flavour in the cheese. It is traditionally eaten on toast with jam, but we love it on a piece of fruity Miller's Toast!
