One of the great things about this cheese is that it can be eaten all the way through the aging process – young or old, it will still taste great and it picks up more pronounced flavours as it develops. When young, the taste of the Crottin de Chavignol is clean and nutty while the outside appearance is pale.
 
Hand selected from tiny farm producers by affineur Christian Janier and matured to perfection in his cellars in Lyon.
 
Notes on mould: Conilly and crottins and all non-ash covered goats cheeses are types of cheese that develop mould when they ripen because of the high acidity of goats cheese. Blue and green dots to bright yellow and grey ‘fluffy’ mould on the rind is normal and a good sign that it’s a good level of ripeness. However mould in the interior of the cheese isn’t and should be removed or cheese discarded.
