Made exclusively with summer milk, each wheel of Reypenaer XO is slow-aged for 3 years in a 100 yr old ageing-house overlooking the Old Rhine. As the cheese ripens, it develops a rich, tawny orange hue, and an abundance of those flavourful protein crystals we all know and love. If strong, punchy flavours are your jam, you'll be sure to love the aromas of buttery caramel, cognac and walnut in the Reypenaer XO. We recommend serving in up in thin slivers, simply becaue its flavours are so concentrated - a little definitely goes a long way with this one.
