 The Rockflower is made in a mountain dairy that has been making Emmentaler for over 100 years. Limited by the quota of Emmentaler that can be made each year, cheesemaker Silvio Schöpfer created this new cheese using the same unadulterated raw Cow's milk. It is aged for four months in the farm, followed by another 6 months in a cave cheese cellar. The Rockflower has a firm and smooth texture. It has a predominantly savoury note of roasted walnuts and cooked cream.
