In autumn and winter, cows that usually graze on hilltops of the Jura Mountains return to the valley. Their milk - typically used for Gruyere (Swiss side) and Comte (French side) - is then used to make these smaller wheels of Mont d’Or. Each cheese is wrapped in locally harvested spruce bark, adding a subtle woody note.

When ripe, Mont d’Or is creamy and spreadable. It is traditionally baked and enjoyed like a fondue, pairing wonderfully with potatoes, pickles, and other accompaniments.
