This French innovation may look like a pudgy brie, but it's actually much creamier as it is made with double cream. This cheese may remind you of a triple-creme despite being a double-creme cheese, as the texture is achieved by "ultra fiitration", which breaks down the fat molecules in the milk in order to further disperse them through the paste.
